Quality Control of Cheese Using FT-NIR

The FT-NIR spectrometer MPA can determine a number of quality parameters in a range of cheese products that include cream, pre-processed, hard slicing and soft cheese within seconds. The near-infrared measurements are done in easy-to-fill disposable Petri dishes made of polystyrene.

In this way, using glass is avoided as this is needed as per the regulations. It is possible to sprinkle the grated cheese or smear the soft cheese into the Petri dish. With the help of a Si-diode detector, the sample in the MPA spectrometer is measured and virtually speaking, the complete sample depth is analyzed and scanned.

Optionally, the sample measurement can be done in reflection. Anyway, a sample rotator is used for enlargement of the scanned area and for improving the repeatability of the measurements. Based on the type of cheese, parameters such as pH value or salt content can also be defined with a single measurement. The results of calibration with different kinds of cheese are provided below. For dedicated product calibrations, the accuracy may improve significantly.
